Cream of Broccoli Soup

Amount Measure Ingredient -- Preparation Method

1 1/2 cups Swanson's Natural Goodness Fat-Free Reduce -- chicken flavor
2 cups chopped broccoli
1/2 cup scallions
2 tablespoons diet margarine
2 tablespoons flour
1/2 teaspoon dried marjoram
1/2 teaspoon salt
1/8 teaspoon pepper
1 cup evaporated skim milk

1. In a 3 quart saucepan, combine broth, broccoli and scallions. Bring to a boil, reduce heat and simmer about 10 minutes or until broccoli is tender, cool slightly.

2. Place mixure into blender or food processor and puree until smooth.

3. In sauce pan melt margerine. Blend in flour, marjoram, salt and pepper. Gradually stir in evaporated milk until mixture is smooth. Cook and stir over medium heat until mixture is thicken.

4. Stir in pureed mixture. Heat to serving temperature.
